My Saturday morning usually starts with a run. And then after the run, I’m very hungry but too tired to cook. I will usually just grab a quick yogurt or make my morning energy smoothie and start my day. But just a few weeks ago, I was introduced to a Saturday morning treat – the crispy egg.
There are only a few amazing things necessary when it comes to food – that it is easy to make and that it is absolutely delicious (forget healthy, although there are worse things). The crispy egg is just that. You’ll just place a pan on the stove, turn it to medium to high heat, pour some olive oil and wait until the pan starts SMOKING. It’ll usually take about five minutes. Throw on an egg, step back and let the egg bubble up until the bottom is CRISPY. Use a spatula to loosen the egg from the pan and SERVE. It is a great topping for anything – salad, toast, or anything else. Feel free to get creative. I like enjoying mine with a side of blistered padron peppers or shishito peppers.
